Tomato Basil Salad

• 3 large tomatoes
• 50g tofu
• Olive oil
• 3 cloves of garlic
• Salt and pepper to taste

Method to cook:
Slice 3 large tomatoes. Add 50 g cubed silken tofu. Combine 1 teaspoon olive oil, 3 cloves of minced garlic, salt and pepper to taste in a jar with a tight fitting lid. Drizzle the oil mixture over tomatoes and tofu. Sprinkle with 5 to 6 minced basil leaves and allow to stand for 15 minutes in a covered bowl before serving.
