Cakes For Christmas

cakeHere comes the glorious month of December when the occasion of Christmas and New Year calls for celebration. It’s the time, when people indulge, organize parties and prepare mouthwatering delicacies. What could be more delicious than a sumptuous cake? Read the recipes and try these out. CHOLOLATE CHIP and NUT CAKE

Ingredients: 2 ½ cup Flour, 3 teaspoons Baking powder, 1 teaspoon Baking soda, 1/4 teaspoon Salt, 1 cup Butter or margarine, 1 cup sugar, 3 eggs, 1 cup chopped nuts (preferably walnuts), 2 teaspoon sour cream, 1 cup chocolate chips, 1 cup vanilla, ½ cup brown sugar, 2 teaspoon cinnamon

How to prepare: Preheat the oven at 350o and grease the pan beforehand. Now, sieve the flour with baking soda, baking powder and salt 3 times. Coarsely rub in the nuts in the sieved flour and keep it aside. Whip butter and sugar together and beat in the eggs one at a time to this to create a smooth mixture. Add sour cream and vanilla to the creamy mixture. Finally add sieved flour mixture to this and prepare a batter that has dropping consistency. Now add ½ of the chocolate chips, brown sugar and cinnamon mixture to it. Pour ½ the batter in the greased pan then sprinkle the leftover chocolate chip mixture. Top it again with the remaining batter, and again sprinkle the remainder of the chocolate chip mix on the top. Bake for 20 minutes in the preheated oven. Once done, remove it from oven and let it cool for 5 minutes. Loosen the sides of cake with a butter knife and invert it onto serving plate. Your cake is ready to serve.

APPLE CINNAMON MUFFINS

Ingredients: 2 apples, 1 cup plain flour (maida), 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, 1 cup butter, 1 cup castor sugar, 1 teaspoon cinnamon (dalchini) powder, 1/2 teaspoon vanilla essence, 1/2 cup chopped walnuts (akhrot), 2 to 3 tablespoons milk, butter to grease the muffin moulds

How to Prepare: Preheat the oven at 200o (400o F). Grease the muffin moulds and keep aside. Cut the apples into small pieces and keep aside. Sieve flour with baking powder and baking soda. Put butter in a mixing bowl and mix until it gets soft and creamy, then slowly add castor sugar to this and mix well. Add apples, cinnamon powder, and vanilla essence and mix well. Now slowly add the flour and walnuts to this mixture along with 2-3 spoons and mix gently to prepare the batter.
Now, put 2 tbsp of the batter into each muffin mould and place the moulds in the preheated oven to bake for 20 to 25 minutes. Finally remove the muffins from oven and serve warm.

EGGLESS CONDENSED MILK VANILA CAKE

Ingredients: 140 grams plain flour (maida), 1 ½ teaspoon baking powder, ½ teaspoon soda bi-carb, ¾ cup (200 grams) condensed milk, 60 ml. melted butter or 1 teaspoon vanilla essence

How to prepare: Sieve the flour, baking powder and soda bi-carb together and keep aside. Combine the condensed milk, melted butter, vanilla essence and 75 ml. of water and beat well. Add the sieved flour mixture and mix gently with help of a spatula to prepare batter of dropping consistency. Pour the batter into a greased and dusted 175 mm. (7”) diameter tin. Bake in a pre-heated oven at 200 º c (400 º f) for 10 minutes. Then reduce the temperature and bake at 150 º c (300ºf) for another 15 minutes.

Your cake gets ready when it leaves the sides of the tin and is springy to touch. When done, remove from the oven and leave aside for 1 minute. Invert the tin over a rack and tap sharply to release the cake. Cool and serve as and when required.
