Summer coolers

Milk shake

Start the day with a big glass of chilled milk in summer to control acidity and heat instead of your steaming coffee or tea. Blend 200 ml of cooled milk with a pinch of cardamom powder and a teaspoon of ground sugar, with 200 ml of chilled water or ice with an electric blender until foamy. Sip and stay cool for the day ahead.

Watermelon crush.

Deseed a ripe sweet watermelon and puree it thoroughly with ice in an electric blender. Sieve the remains. You can enjoy this fruit punch either alone or add a dash of lemon juice and rock salt to enhance the flavour.

Panna of green mangoes

Pressure-cook a kilo of green mangoes in little water. Discard the water and retain the contents, after removing the skin and the seeds. Puree them well enough in an electric blender. Allow it to cool. After a while, blend together, heaped seven table- spoonfuls, of sugar, a pinch of cardamom powder and a pinch of saffron with iced water in an electric blender. Serve it cool.

Muskmelon shake

Halve melon, remove seeds, but retain the inner juice. Peel and finely chop one cup of melon. Chop the remaining in big pieces and blend in an electric blender with milk, icecream, ice or water, whatever is your choice of medium with sugar. Serve in tall glasses with finely chopped pieces of melon.

Sweet lassi and the salty tangy version

Summers are incomplete without tall glasses of cooled, whipped, and frothy yoghurt, served with a pinch of cardamom. Use your hand blender to whip up a chilled glass.

For the salty version, beat yoghurt with hand blender until smooth. Then add, chilled water, and churn well till mixed. Hold grated ginger in a pouch. Dip it in the yoghurt and allow ginger to infuse. Add salt. Break a chilly in two pieces, heat a little oil over the pan, add mustard seeds, asafotedia, chilly to the oil. When it starts to splutter, allow it to cool. Later add to the yoghurt and serve with freshly chopped coriander leaves.

Mint punch

Try mint punch to beat the heat during summers. Take a few sprigs of mint leaves. Combine it with sugar, a pinch of rock salt, lemon juice and ice-cold water. Beat it in an electric blender till it turns frothy. Enjoy.
