Delicious Cheese Cake

Ingredients: 1-1/2 cup butter based biscuit crumbs 1/2 cup walnuts, finely chopped 2 tablespoons light brown sugar 6 tablespoons butter, melted Topping: 2 cups sour cream 1/4 cup fine granulated sugar Assorted candies or sprinkles Filling: 1 cup cream cheese, softened 1 cup fine granulated sugar 3 teaspoons vanilla essence 4 eggs, lightly beaten 1 cup chocolate chips Method: Place an un-greased 9 inch pan in a double thickness of heavy-duty foil. Securely wrap foil around pan. In a bowl combine the biscuit crumbs, walnuts, brown sugar and stir in the butter. Press the batter on the bottom and up the sides of the prepared pan. -Place on a baking sheet. Bake at 350

Sev Puri (Chaat)

Ingredient 1 medium potato, boiled, peeled and diced 1/2 cup canned chickpeas, drained 3 to 4 tablespoons finely chopped red onion 40 pani puris 1/2 cup yogurt 1/2 cup sev bhujia 1/4 cup date-tamarind chutney 1/4 cup mint chutney 1 tablespoon chaat masala 1/4 tablespoon red chilli powder or cayenne or paprika Method Mix together the boiled diced potato, chickpeas, red onion, 1/4 teaspoon chaat masala and salt. Set aside. Gently poke a hole on one side of a pani puri. Make it large enough so you can stuff it with the potato mixture. Place some potato mixture inside the pani puri cavity. Top with about 1/2 tablespoon of yogurt. Sprinkle some sev on top of the yogurt. Then add date-tamarind

Spicy Oats Upma

Ingredients:   3 tablespoon oats ½ cup water ½ teaspoon cooking oil 1 onion ½ chopped tomato 2 green chillies 1 teaspoon chopped coriander leaves 1 tablespoon soaked dal   Method to cook Take 3 tbsp oats and add to ½ cup water. Cook on a stove for 2 mins or microwave for 30 seconds. In a pan, take ½ tsp cooking oil and heat it. Add 1 chopped onion, ½ chopped tomato, 2 green chillies and 1 tsp chopped coriander leaves. Saute till slightly cooked. Add 1 tbsp soaked dal (washed black gram ). The partially cooked oats are added to the sauteed vegetable and dal mixture. Strawberry Smoothie

Ingredients: • ½ cup strawberries • 1/2 cup skimmed milk • ½ cup low fat yogurt • ½ teaspoon honey • 6 to 7 almonds Method to cook Coarsely chop ½ cup strawberries and gradually add 1/2 cup skimmed milk, ½ cup low fat yogurt and ½ tsp honey to it in a blender. Once it is evenly blended pour into a tall glass and sprinkle finely chopped 6 to 7 almonds. Make a refreshing drink that is very high in nutrition and taste and yet low on calories.

Lebanese Cauliflower

Ingredients: 1 cauliflower 2 tablespoon sesame seeds 5-6 cloves of garlic 2 tablespoon lemon juice   Method to cook Take one head of a cauliflower and break into smaller flowerets. Steam/boil till slightly tender. In a blender, add 2 tbsp sesame seeds, 5-6 cloves of garlic and 2tbsp lemon juice. Blend till the mixture is even but coarsely ground. Toss the steamed cauliflower flowerets in this sesame paste and mix well. Add finely chopped coriander leaves and bake for 10 minutes in an oven. Serve hot.

Tomato Basil Salad

Ingredients: • 3 large tomatoes • 50g tofu • Olive oil • 3 cloves of garlic • Salt and pepper to taste Method to cook: Slice 3 large tomatoes. Add 50 g cubed silken tofu. Combine 1 teaspoon olive oil, 3 cloves of minced garlic, salt and pepper to taste in a jar with a tight fitting lid. Drizzle the oil mixture over tomatoes and tofu. Sprinkle with 5 to 6 minced basil leaves and allow to stand for 15 minutes in a covered bowl before serving.

Paneer Pasta with Garlic Bread

Ingredients: 1 bowl boiled Maccaroni, diced onion, 100 gm paneer, bell pepper, tomato ketchup 2tbsp, voila, red pepper, olive oil 2 tsp and salt to taste. Method to prepare pasta: Boil the maccaroni with a pinch of salt and keep it aside. Cut the onions into small cubes. Cut the tomatoes, paneer and bell pepper and keep it aside. Now heat the oil in a pan and put the onions in it. Cook for some time till onion changes colour to golden brown. Now add the boiled maccaroni and cook for 15 min. Now add bell pepper and paneer and cook for 2 mins. Take care to see that is does not stick to the bottom. Now add salt and red pepper. Finally add tomato ketchup and voila its ready. Serve hot!! Cook Colourful Paratha

Ingredients: 1/4 cup wheat flour, 1/4 cup rice flour, 1 tbsp. soaked moong dal (soaked for 2 hours), 1 tsp. bombay rava, 1 tbsp. spinach chopped, 1 tsp. paneer or cheese grated, 1 tbsp.carrots, beans, peas, cabbage etc. 1 flake garlic crushed, 1/4 tsp turmeric powder, 1 tsp oil, 2 spring onion stems finely chopped, salt to taste, oil for shallow frying. Method: Cut vegetables very fine. Grind spinach to a paste, add chillies if you want. Now mix all ingredients except oil and cheese to make dough of the mixture (consistency like that of paratha). Roll into small parathas . Heat the tawa and make parathas. Cook till even browned and golden on both sides. Garnish with grated paneer or

Veggie Cheese Sandwich

Ingredients: 6 – bread rolls, 15 gm – butter, salt to taste, 2 pinches – white pepper powder, 20g – cheese, 5 – black olive, 4 tbsp – chopped carrot, 2 tbsp – chopped onion, 3 tbsp – chopped mushroom, 4 tbsp – chopped beans, 1 tbsp – chopped garlic, 1 tbsp – chopped green chilli, 15 gm – refind flour, 150 ml – milk , olive oil Method:  Melt butter in a pan & mix it with flour. After mixing butter – flour, pour milk in mixture. Heat olive oil in the other pan and fry garlic. Once garlic changes colour add all vegetables. When vegetables are soft, mix prepared sauce in it. Add salt, pepper and prepare a thick filling and keep a side. Cut the rolls in half
